IMITATION SCRAMBLED EGGS
Preparation Time: 30 minutes
Tools: 10" skillet, potato masher, spatula

Ingredients:

  • 16 oz. firm tofu
  • 2 tbsp. butter or margarine
  • 1/4 cup onion, diced
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red bell pepper, diced
  • 1/8 tsp. dry mustard
  • 1/8 tsp. tumeric
  • 1/8 tsp. paprika
  • Salt & Pepper to taste
Directions:
  1. In a large skillet, on low heat, melt butter or margarine.
  2. Saute onions and peppers until lightly browned.
  3. Add tofu and mash with potato masher.
  4. Cook two to three minutes on low heat. Stir with spatula continuously.
  5. Add spices (or Tofu Scrambler).
    (Adjust spice quantities to your taste)
  6. Cook, turning with spatula until heated throughout.
  7. Remove from heat.
TOFU SCRAMBLER: Can replace dry spices, except salt & pepper. This product is available at health food stores. Use 1/2 package per 16 oz. of tofu.
Serving Suggestions:
Serve with toast or English muffins, butter, jelly, and fried Little Links.
Vegetarian scrapple* is good too.
Yield: 6 servings.
